Pineapple Casserole

It's not always an easy task trying to come up with a dish that the majority of a crowd will like, especially when it's not the "usual," but this dish, definitely scored high!  


Pineapple Casserole

2 large cans chunk pineapple
1 C sugar
6 T plain flour
6 T pineapple juice
2 C shredded cheddar cheese 
1 pkg/sleeve Ritz Crackers, crushed
1 Stick butter, melted

Preheat oven to 350.  In mixing bowl, combine sugar and flour.  Add pineapple juice to make a paste.  Add pineapple chunks and stir until completely coated. Add cheese and mix well.  Place is baking dish and sprinkle cracker crumbs on top.  Pour melted butter on top of the crackers.  Bake at 350 for 30 minutes or until hot and bubbly.
